If the Basque country had an ambassador in Brussels,  without a shadow of doubt, this would be the Fils de Jules . Here as appetizer they served the Txacoly , a white wine from the Spanish Basque country is traditionally drunk in bars in San Sebastien . One goal , a journey to the heart of the Basque and Landes terroir. An escape orchestrated by homegrown chefs , proud to concoct a classic cuisine that combines the flavors of the mountains to the riches of the ocean : Squid a la plancha, Axoa Espelette , Piquillos the bacalao , ...  foie gras terrine , warm raisin or seared duck breast and confit , cassoulet ...
